re. the maf using the standard P11 GT one would be the same as using the Z32 one, it can be done, and will improve things, but it isn't a case of plug and play..

apart from wiring it in, you have to get some sort of piggy back afr controller to get the best out of it

The P11 MAF has enough resources - it should hold up to 250 hp or more.
As ragt20 told you- you should do some extra mods to make the Z32 MAF works ok.
The only point , imo, will be if you are going to make DE+T setup and you are aiming at more than 260hp (which on FWD with opened diff will be a lot of fun and left/right torque steer ).
